Malabar Syle Pasta Recipe

Malabar Syle Pasta Recipe

Pasta recipes are everywhere. The web abounds with them. Malabar Pasta, being the first ever recipe to be posted in my blog, its a long astray from the typical Italian style of pasta and to give it a real face-lift, the Indian way. The recipe happened to be developed by our friend, shortly named P, as pasta was the first choice for a single pot meat on a cold weekend get-away. This is what hunger can do to creative brains, a combinations you've never thought of, hopefully. :)

Ingredients:

Shell Macaroni Pasta - – ½ lb
Onions, finely chopped – ½ cup
Ginger, minced fine – ½ inch
Garlic, minced fine – 4 pods
Green Chillies, finely chopped – 2 no:s
Turmeric powder – 3/4 tsp
Red chili powder- 2 tsp
Coriander powder-2 tsp
Garam Masala - 1 ½ tsp
Soy Sauce - 1 tbsp
Salt to taste

For Marinate:

Chicken- 1 lb
Turmeric powder - 1 tsp
Kashmiri chilli powder -3 tsp
Ginger-Garlic Paste - 1½ tsp
Lemon juice -½ tsp
Salt to taste
Oil for frying

And Here is How:

Cook pasta al dente, drain and keep aside. Marinate the chicken pieces & shallow fry till golden brown. Drain onto a paper towel to remove the excess grease and shred the chicken, when cool enough to handle, and keep aside. Heat oil in a pan; add onions and pinch of salt. Add ginger, garlic & green chillie and sauté till onions are translucent. Now add all the spices and stir for a minute and then add cooked pasta, shredded chicken pieces and stir in well. Sprinkle soy sauce and toss to coat with the sauce. Keep stirring to avoid the spices from getting stuck to the pan. Sprinkle in some pepper powder and remove from flame.

For now, that's from the recipe department for a grand gourmet INDIAN pasta. Hope you would have fun making it as we enjoyed making it and the dinner, savoring our rather spicy tasty buds, in the cowboy log cabin.
